Poi is a Hawaiian staple and superfood loved by locals and non-locals alike. Made of mashed Kalo (taro) root, poi is easily digestible, naturally gluten-free and high in fiber, calcium, iron and enzymes (just to name a few!). Poi is so beloved in Hawaii that we often forgo rice cereal as baby’s first food and offer up poi instead!
Traditionally it is eaten as a side dish, but more and more people are mixing it up in modern and delightfully unexpected ways. Some frown upon this, but I think it’s a great way to get people who are hesitant or unfamiliar with poi’s awesomeness to try it and maybe even grow to love it!
Below is a parfait I whipped up using ingredients we already had on hand. You DO NOT need to go this route because poi is flexible like that 😉
- Fresh Blueberries
- Fresh sliced strawberries
- Fresh sliced bananas
- Chia seeds
- Unsweetened Shredded Coconut
- Monk Fruit Juice or sweetener of your choice- honey, sugar, etc. (optional)
Mix poi with water until you get a yogurt consistency before adding sweetener SPARINGLY. Layer with additional ingredients in cup or bowl before serving. Enjoy!
